work.\u00a0 Not long ago he discovered, in a dust covered chest in some attic or cellar in Scotland, a set of what he believes to be original and heretofore undiscovered works of Burns.\u00a0 After painstakingly transcribing many in that collection, he gave me permission to share this one publicly.\u00a0 I debuted it this past Saturday at our fifth annual Burns Supper and I now share it with a wider audience.\u00a0 You have to admit that after reading, well, I dunno, say, Burns&#8217; famous poem, <a title=\"To a Mouse\" href=\"http:\/\/www.thelifeliterary.com\/?p=544\" target=\"_blank\">To A Mouse<\/a>, how much this one resembles it.\u00a0 It&#8217;s gotta be Burns, don&#8217;t you think?)<\/p>\n<p>To An Egg<\/p>\n<p>White ovoid bundle of versatile wonder,<br \/>\nYour riches I would love to plunder,<br \/>\nWhether thou art intact or torn asunder:<br \/>\nThe perfect food.<br \/>\nIgnoring thee would be a blunder<br \/>\nAnd somewhat rude.<\/p>\n<p>I love you scrambled, hot on the plate<br \/>\nFor that great meal I wouldna be late,<br \/>\nBut also with bacon, the right proper mate,<br \/>\nFried nice, easy.<br \/>\nNow there\u2019s a dish that carries weight,<br \/>\nThough a wee bit greasy.<\/p>\n<p>Or in an omelet you canna be beat<br \/>\nFull a\u2019 onion, cheese, pepper, and meat.<br \/>\nOr maybe w\u2019 haggis?\u00a0 Perfect!\u00a0 Neat!<br \/>\nMy mouth\u2019s a-waterin\u2019.<br \/>\nResisting you\u2019s an impossible feat,<br \/>\nMy will power\u2019s falterin\u2019.<\/p>\n<p>Soft-boiled or sunny-side, either\u2019s fine,<br \/>\nYour hot drippin\u2019 yolk is better \u2018n wine.<br \/>\nTo savor, to gobble, ah, truly divine!<br \/>\nOh what a giftie!<br \/>\nYou buck up my spirits and straighten my spine<br \/>\nGive quite a liftie.<\/p>\n<p>God bless crispy Scotch Eggs, a national dish<br \/>\nAre Egg McMuffins Scottish?\u00a0 You wish!<br \/>\nWe Scots sure like drinking: try a flip or gin fizz<br \/>\nPuts us in a roister.<br \/>\nDon\u2019t forget eggnog, beverage delish.<br \/>\nNeed a Prairie Oyster?<\/p>\n<p>How about wonderful creamy egg salad<br \/>\nA delectable treat worthy of a Scots ballad.<br \/>\nHard-boiled and deviled: also quite valid.<br \/>\nGive me some now!<br \/>\nNot eating these treats makes me pallid<br \/>\nAnd jumpy, somehow.<\/p>\n<p>Eggs international, Huevos Rancheros<br \/>\nEggs Muldoon and Neptune, Farafa de Ovos.<br \/>\nEgg-Drop Soup and Foo-Young, do you care-os?<br \/>\nAnything to suit.<br \/>\nEggs Florentine, Fitzpatrick, Huevos Motulenos,<br \/>\nCan you stomach balut?<\/p>\n<p>Shirred, coddled and basted or served in a quiche,<br \/>\nLoco moco, fritata, I don\u2019t care in the least.<br \/>\nBenedict, souffle, please serve me a piece,<br \/>\nCan\u2019t get enough.<br \/>\nEgg kaka, breakfast casserole, sheesh!<br \/>\nWonderful stuff!<\/p>\n<p>Also in cooking, pancakes and crepes,<br \/>\nHelps puddings, custards, my mouth hangs agape.<br \/>\nAlso fluffy meringues, such angular shape.<br \/>\nSauce Hollandaise.<br \/>\nCookies and cakes and gratins to scrape,<br \/>\nAlso mayonnaise.<\/p>\n<p>Oh bonnie wee eggy you help me walk tall,<br \/>\nThe Maker\u2019s great wondrous gift to us all.<br \/>\nWe\u2019ll stay close to you and surely not fall.<br \/>\nSo shall ye see.<br \/>\n(Is \u2018t odd the egg, would hold me in thrall?<br \/>\nThe yolk \u2018s on me.)<\/p>\n","protected":false},"excerpt":{"rendered":"<p>(My friend and fellow Robert Burns admirer, Argyle Schield, continues to search for undiscovered\u00a0 collections of Burns&#8217;
